Eggless red velvet brownies

One of my friend Latha’s birthday was round the corner. She is really special for the reason being – her son was the very first acquaintance cum friend my son met when we moved in these flats back in 2013 so they have a special place in our hearts.
Lockdown birthdays are called as special only..as it gives us an experience to try something with our own hands especially when we don’t get to buy anything from outside.

Without writing an essay on friendship, let me pen down the recipe such that you all can try it out too. I must say it was loved by one and all as I took it for my friends to enjoy too. Made it 2 days in a row and the results were amazing .

Red velvet cake is usually a cake made for special occasions..like valentine’s day, spouse birthday etc.. likewise, this brownie is special too as it’s for my friends out here. My recipe is inspired by mommy’s home cooking website and adjusted to suit my needs. Ingredients are usually available in our kitchen on a daily basis, so no special requirements to plan the shopping to make this one. Without further ado, let’s get to the recipe and enjoy this yummy red velvet brownies.

Preparation time : 30min

Cooking time : 30-40min

Yields – 20 medium sized brownies

Ingredients

2.5 cups refined flour
1 cup melted butter ( I used amul salted butter)
3 cups powdered sugar
2/3 cup cocoa powder
2 tsp liquid red food color
2 fake egg (4 tablespoons of water + 4 teaspoon baking powder + 2 teaspoon oil)
1/2 cup buttermilk ( 1/2 cup milk plus 2tsp vinegar
1 teaspoon vanilla extract

Instructions
1. Preheat oven to 200°C. Line a baking pan (9×9 inch) with parchment paper and lightly spray with baking spray / butter / oil. Set aside.
2. Melt butter and powdered sugar together, in a large saucepan over medium heat, until sugar dissolves.
3. Whisk in cocoa. Let the mixture cool slightly.
4. Whisk together, in a small mixing bowl, the ingredients for the fake egg (I loved this terminology).
5. Add buttermilk ( mix vinegar to 1/2 cup milk and leave for 8-10min. Once milk curdles, mix it thoroughly) and vanilla; whisk to combine. This gives us buttermilk mixture.
6. Add the buttermilk mixture to the cocoa mixture.
7. Add the sieved flour; whisk to combine.
8. Transfer batter to prepared pan.
9. Bake brownies for 35 – 40 minutes, or until set and a toothpick inserted in center comes out with just a few moist crumbs.
10. Cool completely before cutting.
