Eggless Chocolate Truffle cake

And it’s cake time again, I baked this for my husband’s birthday and it came out well. That time decoration was a lil different than what it is now. Baking it again now..this time for my friends here. Since it’s lockdown phase, and buying from outside is rare..every small happiness we celebrate through home goodies..
This time, this home goodie was to try my hands yet again on Eggless chocolate truffle cake. It’s shiny glaze is the win win with this cake..

Ingredients
Dry ingredients
2 cups maida
3 tbsp cocoa powder
2tsp baking powder
1tsp baking soda

Wet ingredients
1 cup milk room temperature
1/2 cup powdered sugar
1/2 cup milk maid
1/2 cup oil
1/2 tsp vanilla essence
1 tbsp apple cider vinegar

For assembling the cake
250gms sugar
250ml water

For chocolate truffle
400gms baking dark chocolate chopped
250ml fresh cream
1tbsp melted butter

For decorating the cake
Handful of silver balls
Handfull of rainbow balls
Handfull of rainbow sprinkles

Method

For Chocolate cake sponge

1. Take a bowl to make ready your wet ingredients. Add the milk, and vinegar and slowly add (as mentioned above) sugar, oil, vanilla essence,and milkmaid. Mix well and set aside for 5min
2. Sieve the dry ingredients ( all purpose flour, baking powder, baking soda, cocoa powder) and mix them well.
3. Now mix both dry and wet ingredients until no lumps.
4. Preheat the oven for 10min at 180 degrees Celsius.
5. Grease your cake tin and place a butter paper.
6. Pour the cake mixture into the cake tin. Tap it to remove any air bubbles.
7. Place it in the pre heated oven and bake it for 25-30mins.
8. Do the toothpick check after 25min. Insert toothpick in the middle of the cake, if it comes out clean..it means your cake is ready. If not, keep it for lil bit more time to get cooked evenly.
9. Take it out and allow it to cool on the wire rack.

Making the truffle ready

1. Heat fresh cream in a heavy bottomed pan.
2. Once it’s slightly warm, add in the chopped chocolate pieces and give it a mix till the chocolate gets mixed fully.
3. Top it up with butter to give it a glazed shine.
4. Once done, switch off the flame and keep mixing such as to blend the chocolate and cream together.
5. Set aside till your cake gets cooled and gets ready for assembling

Sugar syrup
Heat water and sugar to a syrup consistency and set aside

How to assemble the chocolate truffle cake

1. Once cake is fully cooled, you are ready to assemble it.
2. You have to cut the cake into 2 halves. Use a bread knife and cut it very carefully. It’s the tricky part so be very careful.
3. Place the bottom circle cake on a cake board with 1 tbsp of truffle in the center.
4. Apply sugar syrup on the one half of the cake..it makes the cake spongy and soft
5. Apply 3heaped tablespoon of truffle and spread evenly all over the cake
6. Brush it on the sides too.
7. Now place the other half of the cake on top of this one..and reapply the sugar syrup.
8. And reapply the truffle all over and on the sides too..give it a finishing touch with back of the knife or icing spatula.
9. Once icing it with truffle is done, sprinkle the decorations and ta da your cake is ready to get cut and enjoy.
